Paradise Reimagined: Deep Inside the Mai-Kai Restoration

↑ Charles McKirahan was one of the foremost architects of the Mid-Century Modern movement. The Mai-Kai design was Inspired by Canlis in Hawaii, featuring a 40-foot steel A-frame allowing an open main area, flanked by dining rooms. McKirahan was responsible for some of South Florida’s most iconic buildings of that era.
↑ After attending Stanford University, Bob and Jack Thornton borrowed money from their parents and went on to create the biggest Tiki temple of them all. The Mai-Kai grossed $1 million during its first full year of operation (1957) as the 150 seat-restaurant served 1,000 customers a night. Mai-Kai legends return for 69th anniversary celebration

The Mai-Kai welcomed back dozens of alumni from throughout its 69-year history for a first-of-its-kind anniversary celebration and a weekend full of incendiary performances of the Polynesian Islander Revue. The national historic landmark opened its doors Dec. 28, 1956, adding an authentic dinner show in the early 1960s.
The Dec. 27-28 event marked the first time in history that Mai-Kai performers from eight different decades – from the 1950s through today – all shared the stage on the same weekend. The dinner show combines music (by the Mai-Kai Serenaders) and dance (by the Mai-Kai Islanders) into a flamboyant but culturally accurate tribute to the islands of the South Pacific, running up to three shows a night, seven days a week for the past six decades. After a four-year interruption when the Mai-Kai was closed for a $20 million restoration and reimagination, the revue remains the oldest continually-running authentic South Seas stage show in the United States (including Hawaii).

Many of the alumni gathered at the Mai-Kai on Friday, Dec. 26, for what became an emotional reunion for many. “Feeling so welcome and seeing so many familiar faces really fills the heart with joy,” wrote Malia on her Instagram page, where she posted a reel of the happy reunion. You many know the former dancer and Mystery Girl (2000-2003) today as MeduSirena (aka Marina the Fire Eating Mermaid).

[Click here to see the full list] Among the VIPs were Kainoa Lauritzen (1971-2001), considered the most recognized Polynesian dancer in Mai-Kai history; and Nani Maka, a legendary Hawaiian hula dancer who worked at the Mai-Kai in the 1950s and ’60s. Kainoa performed on stage Saturday and Nani Maka on Sunday.

Saturday’s events included alumni shows at 5:30 and 8:30 p.m. From 7 to 8 p.m., Malia and Kainoa were joined by fellow Polynesian dancer Glenda Florez (1999-2007) for a meet-and-greet and autograph signing in the old Chinese oven room next to the Mai-Kai’s giant Christmas tree. Florez’ daughter, Nai’a, is a current Polynesian dancer and the first female fire knife dancer ever at the Mai-Kai.
Both the Bora Bora and Molokai bars were crowded with guests on the busy Saturday night as Big Harvest performed outside the main entrance. With the addition of the extensive Christmas lights, decor and cocktails for 2025, the annual anniversary event took on an even more festive air.

We attended the first alumni show at 5:30, and it proved to be spectacular. I counted dozens of alumni on stage throughout the performance. It started with a 30-minute all-alumni set and Kainoa doing a solo dance to the classic Bali Hai to open the show. She was followed by three former Polynesian dancers doing the hula as the band performed Lovely Hula Hands.
In rapid succession were were treated to many short performances featuring both men and women, including the traditional Samoan slap dance. An announcement was made thanking the founding Thornton brothers for bringing the Mai-Kai to life, along with the current management for keeping their spirit alive. The show was also dedicated to all of the past alumni who are no longer with us.
The pre-show wrapped up with a performance by two male-female duos, then another Polynesian dance by four female alumni (see photo above). The opening set reached a thunderous climax when the theatrical drum troupe Samkoma took the stage. The four-piece group included MeduSirena and current Mai-Kai lead musician Conrad Teheiura Itchener (aka Kabuki).
The Mai-Kai’s Polynesian cultural director and longtime emcee, Lono Hanohano, then invited all the performers on stage for a final dance and standing ovation. But more was yet to come as Lono handed off emcee duties for the 45-minutte regular show to Varua, a third-generation Mai-Kai employee and son of longtime manager Kern Mattei.
As someone who grew up at the Mai-Kai, Varua was perfect to lead the current group through their performance that also included more alumni guests featured throughout. After the traditional audience participation dance, two alumni took the stage for Ke Kali Nei Au (The Hawaiian Wedding Song).
Next came an old favorite, the drum dance of Tahiti, featuring the spectacular rhythmic hips of both current and alumni female dancers. Not to be out-done, the male dancers had a secret weapon as they prepared for the show’s fiery finale, the signature Samoan fire knife dance. Originating from ancient warrior traditions, the performers spin a machete-like knife with towels wrapped on the ends, then lit on fire.
Performing on the Mai-Kai stage for the first time since the 1990s, three-time world champion fire knife dancer VJ wowed the audience and fellow performers alike with his incredible dexterity with the knife, spinning it effortlessly at high speed, tossing it high in the air, behind his back and between his legs. The artists, craftsmen and management working on the multimillion-dollar reimagination of The Mai-Kai tied a bow on a busy year in late 2023, finishing several projects and taking on ambitious new ones. As the total transformation of the grounds outside becomes a top priority, the indoor guest spaces of the historic restaurant continue to receive careful restoration with no detail left untended.

Meanwhile, manager Kern Mattei is preparing for the completion of new back-of-house facilities, including a totally rebuilt kitchen and two back bars. We caught up with Mattei for an update just before Christmas. Following are his insights on what’s happening on multiple fronts.
Creative director “Typhoon Tommy” Allsmiller added new stenciled artwork to all of the fascia board trim around the front of the building, stretching from the left of the A-frame near the Tahiti Room all the way to The Molokai bar. You can clearly see the restored trim from the sidewalk along Federal Highway.
When the beam extensions were restored in September, Allsmiller said he wanted to design “something a little more traditional” for the trim. He said he tried to create something based more in Marquesan and Hawaiian art than the previous artwork and graphics, which were likely Polynesian Pop designs by George Nakashima during the 1970 renovation.

Walking the Federal Highway sidewalk, you can also see a lot of touch-up work being done on the rock work. After the repairs are done, they will get a textured finish to blend in so you won’t even know they were repaired.
Nearby, a new privacy fence has gone up along the northern windows of The Molokai. Totally refurbished and painted green like the original, it features a new access gate with a slightly different design. As much wood as possible was salvaged from the old fence, Mattei said.
While it’s designed to look jagged and ragged, the new fence is totally rebuilt, better looking and much stronger. Mattei said it still needs the old artifacts added, plus a new ledge along the front. The window water effects are still a work in progress, he said.

Mattei noted that similar repairs to the rock work are happening inside the Tiki garden, where guests enjoy the lush paths, waterfalls and vintage carvings. Crew members who specialize in stucco are adding patches. Allsmiller will then add the proper texture, and he or a painting crew will do the finishing.
For much of December, Allsmiller and fellow Florida artist Scott “Flounder” Scheidly concentrated their efforts on The Mai-Kai’s showroom, home of the Polynesian Islander Revue, the oldest continually-running authentic South Seas stage show in the United States (including Hawaii). Allsmiller spent two weeks refurbishing the stage, carving new decorative trim out of redwood.
The stage is now back to its original glory, Mattei said, including the parquet floor. A Polynesian show was first added almost exactly 62 years ago in early 1962. One of the original performers, Mireille Thornton, remains the show choreographer and costume designer in addition to her role as matriarch of the founding Thornton family.

Meanwhile, renovations started on the vintage lamps high under the 40-foot A-frame. Mattei said they’re using a huge scaffolding to reach to the very top of the ceiling.
They’re fixing as many as they can in place so they don’t need to bring them all down, he said. They’re replacing bulbs and using an air brush to clean them. Some are just dusted while others are being refurbished.
Scheidly did a lot of the work on the lamps while Allsmiller worked on the stage. He later told us he spent an entire week up on the scaffolding, enjoying a view of The Mai-Kai from a vantage point very few see.
With contractors and construction crews moving full-speed ahead on a massive renovation of the infrastructure and exterior of The Mai-Kai, a small team of craftsmen continues to meticulously restore the historic South Florida restaurant’s elaborately themed interior guest areas in exacting detail.

The city of Oakland Park’s recent approval of permits that will allow the major pieces of the $8.5 million project to move forward has grabbed all the attention so far in 2023. But inside the beloved Polynesian palace, creative director “Typhoon Tommy” Allsmiller has been busy in the new year with a wide array of restoration projects.

Completion of porte-cochère roof kicks off many projects to come
By the end of March, the work on thatching the outdoor roofs was progressing nicely after a long pause due to permitting issues. We visited on March 16 to pick up takeout cocktails, then again on March 24 and March 31 for a peek at the progress, both inside and out.
The most noticeable change for guests passing by or picking up quarts and gallons to go this week (April 6-7) will definitely be the completion of the thatched roofs. On March 24, workers were putting the finishing touches on the porte-cochère, which has shielded arriving guests from the elements for the past six decades.

Installed shortly after the 1956 opening, the porte-cochère has been re-thatched and the structure periodically refurbished over the years. But the current project is the most extensive in recent history. [See past coverage]
Later, after the driveway is replaced and landscaping has begun, Allsmiller will work on restoring all the design elements beneath the roof on the center beam and trim. Automobile traffic will no longer pass beneath, allowing guests to sit outside with a cocktail and enjoy the shade and ambience.

Mattei said they plan to reinstall of the canoe that used to hang under the roof, and also restore all the fishnets and lighting. In the meantime, Allsmiller now has a much cooler outdoor area to work alongside his new assistant, fellow Central Florida artist Scott Scheidly (aka Flounder). The large canopy reduces the temperature in the blazing Florida sun significantly.
Next to the porte-cochère, the Bora Bora Room is being readied for demolition. The removal of the 1960s-era building, approved Jan. 11 by the city’s Historic Preservation Board, will pave the way for a reimagined entryway and new parking lot flow. A subcontractor for the job has yet to be named.
Pieces of the Bora Bora will live on, however, after the removal of all vintage decor that can be repurposed. Mattei showed us a pile of lava rock that had been removed, stashed away for use later in the entryway landscaping.

Meanwhile, electricians are busy rewiring the entire property, creating a new grid that will allow for the installation of a half-dozen new air-conditioning units on the roofs. The modern HVAC (heating, ventilation and air conditioning) system will replace the old chiller system and its water cooling tower hidden behind the Bora Bora building.
With the porte-cochère job complete, the company installing the synthetic thatching moved on to finish the uncompleted work on the A-frames over the rear dining rooms. On March 31, work was progressing on the Tahiti and Moorea roofs, which were added during the early 1970s expansion. [See past coverage]
When this is done, the crew from Tiki King will take a break before returning for perhaps the biggest thatching project: Restoring the materials to The Mai-Kai’s towering main A-frame.

This iconic structure, which reaches more than 40 feet at its peak, has undergone changes over the years. Originally, the rear contained thatching while the front portion featured giant screens to let in the air (and rain) to keep the indoor gardens flourishing. [See photo]
While there are no plans to bring back the open-air concept, Mattei said potential designs being debated by the ownership team should give it a more traditional look. We spotted painters on the roof March 24. By March 31, all the undercoating and sealant had been added to the exterior to defend against future leaks.
“It’s finished for now, until we figure out what’s going on,” said Mattei, explaining the process of troubleshooting for pesky leaks before the thatching and final paint job are done. The artwork on the front will be restored by the painter who did the original five decades ago.

Around the back of the building, crews were up on the refurbished flat roof, installing support beams to hold all the new air-conditioning units. The first of these half-dozen new AC boxes was sitting in the back-of-house space that used to house the kitchen, before the October 2020 roof collapse that forced its removal and shut down the restaurant.
Mattei said there’s no rush to rebuild that area until after the underground plumbing is reinstalled to modern standards. The previous kitchen dated back to the 1970 expansion.
However, there is much work ongoing inside the back of house area that survived the roof collapse. Since the permit approvals, a large portion of the existing space used by staff was gutted in preparation for its reimagination.

The Hukilau gave its loyal fans a New Year’s treat by announcing an expanded lineup for the East Coast’s largest Tiki-themed event, giving its regular “villagers” early access and discounts on tickets. The general public can now join the party at the 17th annual mash-up of Polynesian Pop and cocktail culture.
Here are the highlights of the announcement, sent via email and posted on the official website. I also spoke directly with the event’s owner and co-organizer, Richard Oneslager, to get all the scoop on 2018. NEW: As of Feb. 8, this preview is now updated with the late January announcement.

* MUSIC: More headlining bands. The 2018 event will include some of the world’s top surf and exotica bands, including Los Straitjackets, The Madeira, Mr. Ho’s Orchestrotica Quintet and The Martian Denny Orchestra. Villagers will also be thrilled to see the return of The Intoxicators, who missed 2017 after 12 straight appearances. Other performers include The Exotics, Black Flamingos, Czarna Wolgastar, The Royal Pacifics, Skinny Jimmy Stingray, and The Hukilau’s one and only emcee during its previous 16 years, the ubiquitous King Kukulele. * INDUSTRY VIPS: Cocktail influencer makes debut. Boston’s Brother Cleve will bring his vast knowledge of cocktails and music to The Hukilau for the first time. This prime mover of the craft cocktail scene in the 1990s and former member of the groundbreaking band Combustible Edison will present a symposium, make a special DJ appearance, and also have his own bar in the Tiki Tower Takeover event. In addition, rum ambassador Ian Burrell returns from London for a second straight year to host a symposium, two cocktail classes and a special rum tasting. [More details below]
* TIKI TOWER TAKEOVER: Signature cocktail party expands, returns for Round 4. Held on Thursday night in the hotel’s revolving Pier Top Lounge, the fourth edition of one of Tiki’s most exclusive events is likely to sell out just as fast as the previous three. Tickets are limited to passholders, so act now. The lineup will grow from four to five pop-ups (featuring six different bar teams), including returning participants Three Dots and a Dash and Daniele Dalla Pola of Nu Lounge Bar. Scotty Schuder of Dirty Dick also returns, teaming up with Pagan Idol for a special two-bar mash-up. The final two pop-ups will feature the craft cocktail stylings of Brother Cleve and the crew from the U.K.’s Trailer Happiness. [More details below]
* MERCHANDISE: Works of top Tiki artists on display. The official artists for The Hukilau 2018 are Joe Vitale and Donella Vitale, whose work can already been seen on the website and promo artwork. The couple is based in Orlando, where they both work for Disney in addition to being among the most recognizable artists of the Tiki revival. Fun fact: The Vitales are among a select few who have attended The Hukilau all 16 years, along with emcee King Kukulele and co-founder Tim “Swanky” Glazner. Villagers will get first shot at the event merchandise, including the 17th annual mug produced by Eekum Bookum. There will also be special items for some villagers, including a South Seas passholder pendant by Crazy Al Evans.

* ENHANCEMENTS: Feedback from villagers. The Hukilau listened to its attendees and will implement quite a few changes: Extended hours and a second pool party on Saturday (in addition to Friday) including live music, more bars and bands (see above), a “Villager’s Lounge” tent to “meet and hang with old friends and new,” a party featuring all exotica music, and more food trucks.
* MORE SPECIAL EVENTS: Symposiums, Medusirena Marina swimshows. Symposiums, craft workshops, Okole Maluna cocktail classes, hula lessons, plus more new additions were announced in late January. These include three swimshows featuring Marina the Fire Eating Mermaid in her home at the nearby Wreck Bar in the B Ocean Resort, plus symposiums on Disney’s Trader Sam’s Tiki bar concept and the heyday of Tiki on television. Craft workshops will feature a trio of noted Tiki artists, while cocktail classes will include bartenders and experts from across the country. There are many great cocktail debates, most notably the Martini (gin or vodka?) and Old Fashioned (rye or bourbon?). At The Mai-Kai in Fort Lauderdale, it’s the Mutiny vs. the Black Magic in an epic battle between two classic rum-and-coffee cocktails.

The only way to truly compare these titans until recently was to sit down at the restaurant’s legendary Molokai bar and taste them side-by-side. This can be a daunting task since they’re both very strong and very large cocktails, not that we haven’t tried many times.
But thanks to our research, you can give it a whirl in your home bar with the tribute recipes posted below and on the Black Magic review. These aren’t simple drinks, but we’re sure you’ll find the results well worth the effort.
I pitch my tent solidly in the Mutiny camp. It’s always been decidedly higher in my Mai-Kai cocktail ratings (currently sitting at No. 10) and has an incredible complexity that keeps drawing me back. The Black Magic isn’t far behind at No. 14.
So where did these distinctive cocktails come from, and why are they so similar? The Black Magic came first, reportedly created before The Mai-Kai’s opening by mixologist Mariano Licudine, who was then working for Don the Beachcomber. It appeared on the original 1956 Mai-Kai menu and was joined some 15 years later by the Mutiny.

According to legend, the Mutiny was conceived on one of the many Mai-Kai staff fishing trips at which the participants always brought an ample supply of two cocktails: the Black Magic and Barrel O’ Rum. According to the story, there was a rebellion against those two drinks always being featured. To quell an impending mutiny, an idea was hatched to somehow combine them into one monster drink, and the Mutiny was born.
It’s unclear if they were actually mixed together that day on the boat. More likely, Licudine put his talents to work later to create an amalgamation of two of the most popular drinks on the menu.
