How big a punch can Tiki Month take?

Every February, Tiki cocktail bloggers gather for Tiki Month at The Pegu Blog to share cocktail recipes, tips, tricks and musings about the state of tropical mixology. Why February? It has something to do with an escape from Mother Nature’s frigid wrath, but I don’t really grasp that concept having been marooned in Fort Liquordale for more years than I can remember.

Not a bad place to be marooned, however, especially when The Hukilau rolls into town every year. There’s also a little restaurant called The Mai-Kai. Both serve as a beacon, summoning the greatest minds in the Tiki world to an annual bacchanalia of rum and revelry.

The single event that perhaps reached the pinnacle of rum and revelry was the appearance of Jeff “Beachbum” Berry’s “Rum Rat Pack” at The Mai-Kai during The Hukilau in June 2011, which brings us back to Tiki Month. This year’s blog contributions have been entertaining and informative, covering such esoteric topics as homemade ginger syrup, garnishes made from ground coconut and orange peel, and more drink recipes than you can shake a shaker at. There was also something about geeks who re-create recipes they’ve never actually tasted, if you can imagine that.

Lost in all these intricate tropical concoctions is a common conundrum: How do you handle a thirsty mob who can’t wait for you to carefully fillet an orange or toast coconut? The Rum Rat Pack’s Rumposium demonstrated how to solve that problem with style and flair. In one fell swoop, they whipped up a Tiki punch for 200, featuring 240 ounces of six different rums, a jaw-dropping bowl filled with 630 ounces of deliciousness.

New event celebrates Fort Lauderdale’s mid-century modern architecture, style

Update: Mai-Kai history event joins the party as inaugural Mod Weekend kicks into gear

Interest in classic mid-century design and style has been building for decades, coinciding with a general distaste among many for the throw-away culture of the late 20th century that continues unabated. At the core of the modern esthetic is the one-of-a-kind architectural movement that followed World War II and flourished until the upheaval of the late 1960s.

This golden age of style coincided with other classic movements – such as Tiki, Googie and Atomic Age – all morphing into one gigantic era that arguably produced mankind’s first true culture of cool. It took the success of TV’s Mad Men to bring “mod” style to the 21st century masses, but support from an enthusiastic core of supporters has never waned.

In Palm Springs, Calif., arguably ground zero for vintage mid-century modern architecture in the United States, the eighth annual Modernism Week is in the midst of an 11-day celebration expected to draw more than 25,000 retro enthusiasts. Featuring bus tours, cocktail parties, lectures and films, Modernism Week is billed as “the only such event in the country.”

That distinction ends in March, when Mod Weekend makes its debut in Fort Lauderdale. Like California, Florida is a treasure trove of shining examples of the movement. Both experienced construction booms during the ’50s and ’60s, the height of the era. And Fort Lauderdale, like Palm Springs, is a hotspot for mid-century style, from its distinctive beachfront hotels to its vintage housing developments.

Lost Cocktails of The Mai-Kai: The late Dr. Fong has a funky and famous history

The concept of a “Polynesian” cocktail is somewhat of a misnomer. While most tropical drinks have names and imagery that recall Polynesia, most are actually Caribbean rum concoctions reinvented by American restaurateurs. One notable exception is the distinctive Doctor Funk, also sometimes known as Dr. Fong.

Doctor Funk was an actual person as well as a real Polynesian drink. Born in 1844 in Germany, Dr. Bernhard Funk migrated to Samoa around 1881 and was reputedly the first medical practitioner in the capital city. He became friends with Scottish novelist Robert Louis Stevenson (author of Treasure Island and The Strange Case of Dr. Jekyll and Mr. Hyde) and was the bedside doctor when Stevenson died in 1894 in Samoa.

Dr. Funk was not only a skilled doctor but also a mixologist of some note. The Doctor Funk was a notorious drink that became known throughout the region. It was mentioned by travel writer Frederick O’Brien (1869-1932) in his books White Shadows in the South Seas (1919) and Mystic Isles of the South Seas (1921). The latter calls the drink “a portion of absinthe, a dash of grenadine – a syrup of the pomegranate fruit, the juice of two limes, and half a pint of siphon water.” It was apparently served by the doctor as a “medicinal tonic.”

Dr. Funk thrived in Samoa, marrying the daughter of a chief, but health problems caused him to return to Germany, where he died in 1911. After his death, a granite stone was placed in his honor on the shore of the mysterious Lake Lanoto’o in Samoa, where Funk had built a health resort. The secluded lake still contains goldfish, illegally introduced to Samoa by Dr. Funk. A drink this legendary and rooted in the South Pacific was perfect fodder for Tiki bar pioneers Donn Beach (Don the Beachcomber) and Victor Bergeron (Trader Vic’s). Both created Doctor Funk cocktails in the 1930s and ’40s with pretty much the same flavor profile. But over the years there became so many different versions by Beach, Bergeron and many others, it became impossible to pinpoint a definitive “original” version.

Doctor Funk also inspired variations with names such as Dr. Fong and Dr. Wong. Many of these became synonymous with the (now somewhat politically incorrect) Fu Manchu-style Tiki mug that was widely produced in the mid-century. Restaurants across the country simply invented their own drinks called Doctor Funk or Dr. Fong to go into the mug (see “bilge” at the very bottom of this review).

When The Mai-Kai opened in 1956, the menu included a Dr. Fong cocktail based on one of the Don the Beachcomber versions of Doctor Funk. This is where bartender Mariano Licudine worked for nearly 20 years, mixing the drinks that became the template for most of the original 1956-57 Mai-Kai menu.

Luckily for us, Tiki historian and author Jeff “Beachbum” Berry has over the past 15 years decade published two of Beach’s Doctor Funk recipes, which I’ve included below. In 2016, thanks to another author, guests at The Mai-Kai were finally able to taste the authentic Dr. Fong after an absence of more than 40 years.

Dr. Fong was featured on a special lost cocktails menu in September 2016 during the book release party for Mai-Kai: History and Mystery of the Iconic Tiki Restaurant by Tim “Swanky” Glazner.

The special event also featured several other long-lost cocktails (Hanalei Bay and the Demerara Float) plus two days of gatherings of Mai-Kai enthusiasts from across the country.

The Hukilau releases schedule, updated website for this June’s Tiki bash in Fort Lauderdale

In just six months, hundreds upon hundreds of Tiki and retro culture enthusiasts from around the world will descend upon Fort Lauderdale in search of the most authentic Polynesian Pop experience imaginable. If Christie “Tiki Kiliki” White has any say in the matter, they won’t be disappointed.

The Hukilau

White has assembled another surprisingly eclectic cast of characters for the 12th edition of The Hukilau, a weekend celebration set for June 6-9 at the Sheraton Beach Hotel (aka the “Yankee Clipper”) and The Mai-Kai restaurant. As always, the event manages to embrace every nuance of mid-century kitsch: Exotica and surf music, rum and tropical cocktails, mermaids, Polynesian floor shows, Hawaiian shirts, Tiki mugs, vintage culture and artwork, Tiki carving, tattoos, and much more.

Co-founded by White in 2002 in Atlanta, the event found its permanent home at Fort Lauderdale’s legendary Mai-Kai in 2003 and has featured some of the biggest names in the modern Tiki revival, from author and mixologist Jeff “Beachbum” Berry (who returns for his eighth appearance this year) to author/photographer Sven Kirsten (The Book of Tiki) and artist Josh Agle (aka Shag).

The official website, TheHukilau.com, re-launched Tuesday and a new Travel Bulletin (the festival’s e-mail newsletter) was distributed with lots of event updates, including some new additions to the musical lineup and a detailed daily schedule.

Tap into The Mai-Kai anywhere with the new smartphone app

The Mai-Kai is a 56-year-old slice of vintage Polynesian Pop that evokes the simpler times of the mid-20th century. But this doesn’t mean the classic Fort Lauderdale restaurant is in any danger of being left behind by its trendy competition.

Proof of this can be found in a newly released, free smartphone app that lets you make your dinner reservations with the tap of a few buttons, browse the menus, check for special events, post comments, upload photos, and lots more. You can also use the app to sign up for newsletters, participate in a loyalty program, buy gift cards, and click on links to Facebook and YouTube videos.

Just search for “Mai-Kai” in your phone’s app store to download. I grabbed the app for my iPhone via iTunes (see screenshot below) and gave it a test run at the 56th anniversary party by posting a comment and uploading a photo. And if you’ve had a few too many Barrels O’ Rum, the app has a simple and handy tip calculator.

The Hukilau offers special deal if you book before 2013

The 12th edition of The Hukilau returns to its longtime June time slot in 2013, but it’s never too early to sign up for the East Coast’s premiere Tiki event.

If you buy an all-access pass in the waning days of 2012, you’ll automatically be “grandfathered in” to any additional events – such as rum and cocktail tastings – that may require an additional fee if you book later. In past years, some great symposiums and special events were added added as the event approached, so here’s your opportunity to get in on the ground floor.

The Mai-Kai celebrates its 56th birthday, rings in 2013 with special events

On Dec. 28, 1956, the venerable Mai-Kai restaurant opened its doors on a desolate stretch of Federal Highway in Fort Lauderdale. In the ensuing half-century, the rest of the world has changed radically but you can still be guaranteed a totally immersive South Seas experience in this one-of-a-kind slice of Polynesian paradise.

This mid-century marvel will celebrate its 56th anniversary next Friday (Dec. 28) with its annual Customer Celebration Party in The Molokai bar starting at 5 p.m. Live music will be provided all night by Ty and Andrew, The Mai-Kai’s house band, playing a mix of island and holiday music on ukuleles, bongos and guitar.

There will also be an extended happy hour all night in The Molokai. After 7 p.m., just tell your waitress that you’re there for the celebration party in order to receive half-priced drinks and appetizers. This includes most of The Mai-Kai’s legendary tropical cocktails, many of which date back to the early days of Tiki mixology in the 1930s. The Mai-Kai hosts ‘Classic Dining’ author Dec. 13 with special event, extended happy hour

Classic dining establishments that date back to the middle of the 20th century and are still thriving today are a rare find. South Florida is lucky to have one of the most grand and well-preserved in our midst: The Mai-Kai in Fort Lauderdale, est. 1956. A new book, which features the Polynesian palace on its cover, takes an in-depth look at these survivors of another era with vintage and new photos, inside information and authoritative stories.

Classic Dining: Discovering America’s Finest Mid-Century Restaurants by author and historian Peter Moruzzi is a lavishly illustrated hardcover book published on Nov. 1 by Gibbs Smith. It features many photos and additional stories from Sven A. Kirsten, author of The Book of Tiki and Tiki Modern.

Mouruzzi will be at The Mai-Kai on Thursday, Dec. 13, for a special event featuring an illustrated talk about his new book. The event, presented by Tropic magazine, will be held in The Mai-Kai’s elaborately themed Tahiti dining room from 7 to 9 p.m. and will include an extended happy hour with half-priced drinks and appetizers.

Lost Cocktails of The Mai-Kai: Take a trip back to Hanalei Bay

Montego Bay

Some lost Mai-Kai cocktails are easier to trace than others. Even though the drink known as Hanalei Bay disappeared from the menu when the United States was still embroiled in the Vietnam War, its legacy is easy to figure out. This small but powerful drink was an obvious take on Don the Beachcomber’s Montego Bay.

Looking at old Mai-Kai and Don the Beachcomber menus, the resemblance both in name and menu artwork is obvious. Named for the second largest city in Jamaica, the Montego Bay cocktail dates back to the early days of Tiki. We’ve included a vintage recipe below, thanks to the research of tropical drink historian and author Jeff “Beachbum” Berry.

Montego Bay was very similar to the Navy Grog and Zombie, also invented by Donn Beach (aka Don the Beachcomber). All were re-invented by mixologist Mariano Licudine when The Mai-Kai opened in 1956. Licudine spent decades behind the bar at Don the Beachcomber restaurants in Los Angeles and Chicago before he was lured away to Fort Lauderdale. His re-creations of Beachcomber classics usually included a tweak or two, and the Montego Bay is no exception.

But exactly how were we able to figure out those tweaks? Hanalei Bay was served at The Mai-Kai for the first time in nearly 50 years at a special event in September 2016 celebrating the release of a lavish new book, Mai-Kai: History and Mystery of the Iconic Tiki Restaurant by Tim “Swanky” Glazner.

It was one of the last remaining “lost” recipes (along with Dr. Fong) that had not been featured at special events over the past several years. I had almost given up hope of ever tasting it when The Mai-Kai’s general manager, Kern Mattei, revealed during the summer of 2016 that both had turned up in an old Mariano Licudine recipe book. It was great to take a trip back in time while enjoying the book release party with Tikiphiles and Mai-Kai fans who had traveled across the country for the event. [More photos on Tiki Central]

Glazner gave a guided tour of The Mai-Kai’s dining rooms, plus a special on-stage presentation featuring stories and photos from the book and his archives. The video clip of Johnny Carson enjoying a Mystery Drink on The Tonight Show is always a highlight (see past coverage).
